Are you headed to a Halloween party this year? With Halloween on a Friday, the answer is probably yes. You might be wondering, what Fall or Halloween themed dish can I bring? The following ideas are healthier options to bringing candy or cookies and easy to throw together too!
Roasted Pumpkin Seeds
Don’t throw them away! Roast these tasty seeds for a nice addition to soups, trail mix, salads or enjoy them alone as a snack.
Cleaning Pumpkin Seeds
1. Scoop out the seeds and pulp from the pumpkin.
2. Place in colander.
3. Under cold running water, remove the seeds from the pulp and strings.
4. Pat dry with a clean kitchen towel.
Roasting Pumpkin Seeds
1. Preheat oven to 300.
2. Combine 1 tsp olive or canola oil and salt to taste per cup of seeds. If you like, you can add other spices like pepper, cumin, chili powder, paprika, and/or garlic.
3. Toss seeds with oil mixture until well coated.
4. Spread evenly on a cookie sheet.
5. Bake until golden, about 30 minutes, stirring occasionally.
6. Let cool on paper towels.

Spiced Pumpkin Dip
Perfect for holiday get-togethers! This spiced, creamy dip tastes great with fresh fruit slices such as apples, pears or bananas.
• 8 ounces reduced-fat cream cheese, softened
• 1 cup powdered sugar
• 1 (15 ounce) can pumpkin puree
• 1 tablespoon pumpkin pie spice
• 1 teaspoon vanilla extract
• 1/2 teaspoon cinnamon
1. Blend cream cheese and powdered sugar until smooth in a food processor. Add pumpkin and remaining ingredients. Blend thoroughly.
2. Chill 30 minutes or until ready to serve. Serve with sliced fresh fruit.
Servings: 20 (2 tbsp = 1 serving)

Cinnamon Popcorn Balls
Popcorn balls are a classic halloween goody and easy to make too!
8 cups air-popped popcorn
½ cup red hots candy
1/4 cup light butter spread
1/4 teaspoon salt
1 (10-ounce) bag marshmallows
Cooking spray
1. Combine popcorn and candy corn in a large bowl.
2. Melt butter in a large saucepan over medium heat; stir in salt and marshmallows. Reduce heat to low; cook for 7 minutes or until the marshmallows melt and the mixture is smooth, stirring frequently.
3. Pour marshmallow mixture over popcorn mixture, stirring to coat well. Lightly coat hands with cooking spray; shape popcorn mixture into 20 (2-inch) balls. Allow mixture to cool enough for kids to handle if they are helping. Popcorn ball will keep for about 3 days when stored in an air-tight container.
Yield: 20 servings (serving size: 1 popcorn ball)
