Blueberry Bran Muffins
Ingredients:
- 1 cup wheat bran
- 1 1/2 cup whole wheat flour
- 1/4 teaspoon cinnamon
- 1/2 cup dried blueberries
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 cup whole milk
- 1/4 to 1/2 cup honey
- 2 tablespoons vegetable oil
- 1 egg, slightly beaten
- 1/4 cup chopped pecans or chopped almonds *optional
Let's bake:
- Preheat oven to 400F.
- Spray a 12 cup muffin pan with non-stick spray
- In a bowl, mix milk, honey, oil and egg and mix together.
- Mix dry ingredients in a separate bowl.
- Pour wet ingredients into dry ingredient, and swiftly mix a couple of times just until moistened.
- Spoon muffin mix into the greased tin.
- Bake for 12-15 minutes until done.
Variations:
- Replace blueberries with dried cranberries or raisins.You can also use fresh berries.
- If you want your muffins to be sweeter, add 1/4 cup of applesauce.
- If you do not have honey you can use molasses.
