Have you noticed that more and more restaurants are featuring this favorite soup on their menu? If you have ever ordered it you probably know just how full of fat it is. This version is low in fat yet very tasty! 

Ingredients

1 stalk celery – finely diced
1 small onion – finely diced
2 cups broccoli – fresh or frozen; chopped
1 cup cauliflower – fresh or frozen; chopped
3 cups low-fat vegetable or chicken stock
Pinch of black pepper
Pinch of salt
½ cup non-fat yogurt
¼ cup low-fat cheddar cheese


Chop broccoli, cauliflower, onion and celery and put in a medium sized pot. Add stock and salt and pepper and bring to a boil. Reduce heat and cook until vegetables are very soft.   Do not drain. With a hand blender, puree the vegetables in the pot.  Add the yogurt and cheese to the pot, stirring until well blended and cheese is melted.   Serve immediately with a little sprinkle of cheese on top.
