Breakfast on the run does not have to mean a trip through a fast-food drive through! Make these low-fat breakfast scones the night before and just pop one into the microwave before you run out the door. Start your day off right!
½ cup fat-free sour cream
½ cup fat-free vanilla yogurt
1 teaspoon vanilla or lemon extract
1 teaspoon fresh lemon juice
2 cups all-purpose flour
¼ cup granulated sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
4 tablespoons chilled reduced fat margarine

Mix yogurt, sour cream, lemon juice and extract. In a separate bowl combine all dry ingredients. Cut the chilled margarine into the flour mixture using a pastry blender. Pour wet ingredients into the dry ingredients and stir until just mixed. Do not overwork the dough or they will be dry and heavy.

Drop the dough onto a lightly floured surface. Do not roll out the dough. Press the dough mixture out into a circle approximately 3” thick. With a knife, mark the dough across the surface, marking it into 12 pieces. Do not cut through the dough!

Sprinkle the surface of the round lightly with 1 teaspoon of granulated sugar.

Bake the scones for 20-25 minutes or until slightly golden.
