Raspberry French Toast
- 4 slices Italian brad, cut into ½-inch cubes
- ½ cup fresh or frozen raspberries
- 2 ounces cream cheese, cut into ½-inch cubes
- 3 eggs
- 1 cup milk
- 1 tablespoon maple syrup
- ¼ cup poppy seeds
Raspberry Compote
- Juice and grated peel of 1 lemon
- 1 tablespoon water
- 4 cups fresh or frozen raspberries
- ½ teaspoon cornstarch
- 1 tablespoon maple syrup
- 1/8 teaspoon cinnamon
Baked Grapefruit
- 1 pink grapefruit
- 2 teaspoons butter
- 2 tablespoons brown sugar
- 1 teaspoon cinnamon
- 2 maraschino cherries with stems
Cut grapefruit in half. Using a grapefruit knife, cut sections and loosen fruit from shell. Dot each half with butter and sprinkle with brown sugar and cinnamon. Place in baking pan and bake at 350 degrees for 5 minutes. Turn oven to broil and cook until top is bubbly. Remove from oven, place in a serving bowl and place a maraschino cherry in the center.
