A Mother's Day Breakfast Fit For a Queen

A special breakfast is a charming way to start Mother’s Day off on the right foot. Treat your mother, grandmother, a special aunt, your sisters, or any special woman in your life to a Mother’s Day breakfast.

Unless Mom truly loves to stay in bed, skip the breakfast in bed idea. It may sound luxurious, but eating from a tray while propped up by pillows is a coffee spill just waiting to happen. Plus, it may remind Mom of being in the hospital when she gave birth (they really don’t ever forget, you know).

Instead, put a pretty tablecloth on the kitchen table or set her up in the dining room with the newspaper. Put her favorite CD on, and put a flower in a bud vase at her place at the table. Bring her coffee and juice to accompany her Mother's Day breakfast.

Here are some Mother’s Day breakfast ideas that will tell Mom just how special she is.

Raspberry French Toast
  • 4 slices Italian brad, cut into ½-inch cubes
  • ½ cup fresh or frozen raspberries
  • 2 ounces cream cheese, cut into ½-inch cubes
  • 3 eggs
  • 1 cup milk
  • 1 tablespoon maple syrup
  • ¼ cup poppy seeds
The night before grease two 8-ounce ramekin dishes. Line with half the bread cubes, cover with raspberries and cream cheese cubes, and top with remaining bread. In a small bowl, mix eggs, milk and syrup and sprinkle with poppy seeds. Pour mixture over bread, cover and refrigerate overnight. In the morning, bake at 350 degrees for 25-30 minutes, until puffed and golden brown. Remove from ramekins and top with Raspberry Compote. Serves 2

Raspberry Compote
  • Juice and grated peel of 1 lemon
  • 1 tablespoon water
  • 4 cups fresh or frozen raspberries
  • ½ teaspoon cornstarch
  • 1 tablespoon maple syrup
  • 1/8 teaspoon cinnamon
Combine all ingredients in a saucepan and cook over medium heat until hot and slightly thickened. Serve over Raspberry French Toast.

Baked Grapefruit
  • 1 pink grapefruit
  • 2 teaspoons butter
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 maraschino cherries with stems
Cut grapefruit in half. Using a grapefruit knife, cut sections and loosen fruit from shell. Dot each half with butter and sprinkle with brown sugar and cinnamon. Place in baking pan and bake at 350 degrees for 5 minutes. Turn oven to broil and cook until top is bubbly. Remove from oven, place in a serving bowl and place a maraschino cherry in the center.
