Beans are low in fat, high in fiber and delicious. This quick and easy recipe is perfect for any summer potluck!
If you do not want to cook beans or do not have the time, use canned beans. Make sure they are properly rinsed and drained. You can also vary the beans and include black beans, pinto beans, or even blanched and diced green beans.
3-Bean Salad
- 2 cups cooked garbanzo beans
- 1 cup cooked navy beans
- 1 cup cooked kidney beans
- 4-6 radishes – washed and sliced
- 1 large carrot – peeled and grated
- 1 small red onion – sliced
- 1/8 cup apple cider vinegar
- 1 small tomato, diced *optional
- ½ yellow bell pepper, diced *optional
- 3 tablespoons extra virgin olive oil
- 1 teaspoon fresh dill *optional
- Salt and pepper to taste
- 2 teaspoons fresh lemon juice
Combine all ingredients in a large bowl and mix well. Refrigerate for two hours until chilled.
